Spiced Honey Syrup recipe:
1 cup of honey
3/4 cup of hot water
3-4 shavings of orange peel without the pith that are about 1 inch in width (They're called horse-collar twists to the bar world. Use a peeler for these; its easier than a knife.)
2 cinnamon sticks (3 inches long)
15-20 whole dried cloves
Combine all ingredients in a saucepan, heat until mixture simmers, stir, turn off heat and let steep for two hours. Pour entire mixture into a glass bottle for storage and store in the refrigerator. Strain when adding syrup to a cocktail.
